How to Grow Akasanjaku Yard Long Beans
Germinate seeds on a moist paper towel before planting. Akasanjaku Bean seeds are direct sown in soil of at least 60℉ where there is no risk of frost. Grow in a warm, sunny spot. Sow indoors 2-3 weeks before outdoor planting for an earlier harvest. Be sure to harden off properly when indoor sowing. Young seedlings do not tolerate shock. If you live in a warm climate plant seeds every 3-4 weeks for multiple harvests. Keep soil moist in the early days. It is best to train the vines to climb vertically on supports as they grow. Yard Long Beans are generally low maintenance. See our free PDF vegetable growing guide for more tips.
Harvesting Akasanjaku Yard Long Beans
Harvest when pods are pencil thin, smooth, tender, and 12-16" long. Pods, seeds, stems, and leaves are all edible!
Prepare the pods by cutting them into 2" sections. Pods can be deep-fried, stir-fried, steamed, or used in soups. This type of bean is used in the popular Szechwan dish Dry Fried Beans. Steam the leaves and stems, then toss with an olive oil dressing for a nutritious side.
