Growing New Zealand Blue in the Vegetable Garden
Sow New Zealand Blue seeds 1 inch deep in warm soil after the last frost. Direct sowing is recommended, or start indoors 3-4 weeks before transplanting. Plant 2-3 seeds per mound, then thin to 1 plant. Space plants 8-12 feet apart with rows 8-12 feet apart to allow vines to spread freely.
Use mulch to retain moisture and keep roots cool. Fertilize after the first blooms and again at the time of fruiting. Monitor for pests and provide trellising or vine training if needed.
Harvesting New Zealand Blue
Harvest when rinds are hard and stems solid, typically around 110 days from sowing. Cut fruit with 4 inches of stem attached. Cure in a warm, dry area for 10-14 days to extend storage life. New Zealand Blue stores well and develops sweetness after curing.

Stories/Tips From Our Gardeners
"New Zealand Blue winter squash is a striking heirloom that combines dramatic beauty with outstanding flavor, making it a favorite among home gardeners and culinary enthusiasts alike. Its vines are vigorous and sprawling, so give them plenty of space to roam. They will happily stretch across a generous patch, creating a lush, leafy backdrop for your garden. The fruits are unmistakable: large, teardrop-shaped with slate-blue-gray skin and dense, deep-orange flesh that sweetens as it cures. I always harvest mine just before the first hard frost, then let them cure in a warm, dry spot for a week or two to maximize flavor and storage life. Once cured, New Zealand Blue keeps remarkably well in a cool, dry pantry, often lasting through the winter months while maintaining its rich, nutty, and slightly earthy flavor. This squash excels in soups, roasted dishes, pies, and even simple mashes, making it incredibly versatile in the kitchen. Growing New Zealand Blue is rewarding due to its impressive yields and ornamental appeal. The vines and uniquely colored fruits make a garden come alive. For gardeners seeking a squash that combines beauty, flavor, and long-lasting storage, the New Zealand Blue is a classic choice that never disappoints. Watching the fruits mature and then enjoying them in the kitchen is a seasonal delight that keeps me coming back to plant them year after year."
