Non-GMO New Zealand Spinach is an excellent option for warmer gardens because you get a longer growing season. Not spinach, but a more heat-tolerant substitute for spinach. Similar taste to spinach and they can be used in cooking the same way. As the spring spinach is bolting, New Zealand spinach hits its stride and continues through the summer and into the fall. The plants are larger than spinach.
Plant New Zealand Spinach ½" below soil when it is between 60-75°. Place more seeds than you think are necessary. Final spacing should be a foot apart, but germination can be poor. Plant more seeds and thin out as they grow. Soak the seeds overnight before planting to speed germination, or start indoors a few weeks before the last frost.

One of the easiest vegetables to cook, can be included in many different types of meals. New Zealand spinach is excellent with seafood due to its delicate flavor. Toss it in with some cooked pasta, lemon, and shrimp. Put a poached egg on top of a bowl of greens and eat with other tender vegetables. Also great braised with chicken thighs. The ideas are endless with this delicate green.
