Growing Organic Pepperoncini Greek Golden Peppers in the Vegetable Garden
Grow your own pepperoncinis from seed by planting 2-3 seeds per cell in a seed-starting tray filled with a high-quality germination mix. Bury the seeds about .25 inches deep and water until the tray is totally soaked. Seeds germinate best in consistently moist soil that is 80-90 F. Use a heating pad or other method to raise the soil temperature if possible. Pepper seeds will germinate slower in cool soil and not germinate if the soil is too cold.
Once true leaves appear, thin the seedlings so they are all 2-3 inches apart or transplant them carefully to be in 4” pots. Grow plants at about 70 F during the day and 60 F at night. If you wish to fertilize at this stage, use a very light feed, or don’t do it at all.
Optionally, a cold treatment can increase the number of fruit a plant produces long term. To do a controlled cold treatment, lower the temperature of the growing environment to 55 F at night for one month. The plants should continue to receive full sun (minimum of 8 hours via window or grow lights). After one month, raise the temperature of the trays to 70 F during the day and night until they are ready to be transplanted. Doing this will also result in the peppers being ready to be transplanted out 1-2 weeks earlier. Continue with care as normal after that point.
Pinch off any flower clusters that come on prior to transplantation. When all chances of frost have passed, and the seedlings are about 4-5 inches tall and 6-8 weeks old, you can consider transplanting out into the garden. One to two weeks prior to transplantation, gradually acclimatize the seedlings to the outdoor environment by placing them outside for a few hours each day. Increase the time they spend outside each day. Do not put them out if temperatures are predicted to be below 50 F. It is ideal if the plants have buds but no flowers.
Prepare the garden bed by working the soil and adding compost. Dig holes 12-18” apart in rows that are 2-3’ apart. Ideal soil has a pH of 6.5 and is abundant in phosphorus and calcium. Plant the seedlings in the holes up to the previous soil line. Tamp down the soil and water heavily. Fertilize your plants with an organic phosphorus-containing mix periodically for optimal results. Get a soil test to see if your soil needs to be supplemented. Watch for pests and diseases and act quickly. Use row covers and black plastic to extend the growing season but remove them if temperatures exceed 85 F to avoid blossom drop.
Harvesting Organic Pepperoncini Greek Golden Peppers
Harvest your peppers when they have reached their fullest size of about 2-4” long and 1” wide. Organic Pepperoncini Greek Golden peppers can be harvested at full size when green, yellow, or red. See below for flavor change. Remove the fruits from the plant by clipping the stem about 1-2” above the fruit with sharp shears. Similar to indeterminate tomatoes, peppers continue to produce flowers and fruits throughout the season and will need to be harvested periodically.
Store your pepper harvest in the refrigerator for up to 2 weeks. Their skins are sensitive to cold and will begin to pit after too long.
