Named after Joe E Parker, an agriculture graduate of New Mexico State University (where this variety of pepper was created and modified), NuMex Joe E Parker hot pepper seeds are mostly known for their mild heat, great flavor, and versatility in cooking. Easy to grow, Joe E Parker hot peppers seeds can be grown to be eaten fresh or used in a wide range of recipes. 500-2,500 SHU. ~5,000 seeds/oz.
How to Grow NuMex Joe E Parker Hot Peppers from Seed
Like with most varieties of peppers, it's recommended to start the seeds indoors in early spring, sowing them 1/4" deep and keeping them moist until germination.Seeds typically germinate within 10 to 25 days. Once the seeds have sprouted, they can be moved into either larger pots or directly into the rich soil of a vegetable garden (with at least 18" of spacing between the individual plants).
Sow seeds indoors ¼" deep in fertile soil and transplant seedlings when they are 2" tall and it is warm at night outside.

NuMex Joe E Parker Hot Peppers are a great addition to any garden, thanks in large part to the fact that they are very easy to grow and maintain.
Plants are 2.5" tall with thick green foliage and productive yields.
Similar to Anaheim peppers and rated between 500 and 2,000 on the Scoville scale, the peppers that grow from these seeds have thick flesh and a rich full flavor that makes them extremely versatile when it comes to cooking. A popular choice for roasting or grilling, they can also be used in recipes for salsas, fajitas, soups, and more. Additionally, NuMex Joe E Parker peppers that have been roasted can be frozen for later use.
Harvesting NuMex Joe E Parker Hot Peppers
These peppers are fairly unique in that not only can they be harvested when either green or red, but they can also be eaten immediately when freshly picked if so desired (allowing you to eat them straight out of the garden).
Peppers grown from these seeds will be 6 - 8" in length when ready for harvesting. It takes 70 days from planting to produce green peppers that are ready to eat, and an additional two or three weeks (for a total of about 95 days) to get red peppers at full maturity.
