25 days to baby leaf harvest, 45 days to full maturity. Brassica juncea. Ruby Streak Mustard Seeds. Heirloom, Non-GMO, Open Pollinated. Annual. Arguably the most attractive of all baby leaf mustards, this variety adds delicate spice and colorful elegance to a salad plate. The stems are green with fine lacy leaves or "greens" of this plant vary in color. They can be dark green to maroon. Harvest at any stage from micro-size to full maturity. Approx 13,000 seeds / oz.
Prepare fertile, well-drained soil. It's best to seed in late summer because this mustard variety is very cold-hardy but can bolt in high temperatures. Ruby streak mustard grows quickly, and seeding every three weeks or so will allow for a longer harvest period. Keep the soil moist, watering at ground level if possible. Fertilize as needed. Warmer temperatures can work if harvesting baby greens, but for full-sized plants, cooler temperatures are best.
Harvesting Ruby Streak Mustard
Ruby streak mustard is full grown at about 45 days, but it's common to harvest early for baby greens at 21 to 25 days. At full growth, Ruby Streak Mustard is 6-8" tall. Harvest the lower branches, or just cut the whole plant.
If grown for a fall harvest, a light frost just before can add sweetness to the flavor.
Especially popular in salads because of the sweet taste, ruby streak mustard greens can also be stir-fried, sautéed, or used as a substitute for kale or more bitter mustards in any recipe. Stir fry some greens with onions and garlic, then add some balsamic vinegar and soy sauce, and cook with some chickpeas for a tasty side dish!
Pests to watch out for: cabbage worms, cabbage loopers, cabbage maggots, flea beetles, slugs, and aphids. For potential diseases, watch out for clubroot, downy mildew, alternaria leaf spot, and white rust.
