How to Grow Horned Mustard
For temperate and warm climates: sow in the late summer for mature plants or the early spring for a young crop. In cooler climates: sow seeds in the mid-summer for a mature crop and the late spring or early summer for a young crop. For a continuous harvest, plant every two weeks. The flavor is best when it's grown briskly, so plant in fertile soil and water well.
Thin the seedlings to 10 inches apart for mature heads. Remove weeds promptly and consider mulching between the plants. Horned mustard may bolt as temperatures and day lengths increase. It takes about 3-4 weeks for 5-6 leaves to grow. Thin to 10 inches apart for mature heads.
Harvesting Horned Mustard
Harvest the tender and delectable florets with clean cuts. Begin harvesting at 3 inches tall for baby mustard greens. Young leaves may be harvested at any stage before the stems begin to plump up. Cut them off individually and sparingly to allow the stalks to continue developing. Stems are harvested within 3-4 months.
Culinary Tips
The stem base is often peeled and cooked. It is added to fried rice, soups, and tofu dishes for flavor. The young leaves can be used like any mustard green, in soups, stir-fries, and pickled. As the thick stems develop, the leaf quality deteriorates. Horned mustard is specifically used for pickling or stir-frying. It also has very tender and delicious bud shoots.
