How to Grow New Jang Sin Gourd
To prep the gourd seeds, they should be soaked for 24 hours and then germinated on a moist towel in a dark container. If you live in zones 5 or 6, start the seeds indoors and transplant them outdoors after the last frost and a hardening-off period. If you live in zones seven or higher, germinate the seeds indoors and direct sow.
Hill planting: Form soil into a 1-ft. diameter mound 3-4 inches tall. Space mounds 4-6 feet apart. Plant 2 seeds on each heap. Row planting: Note spacing info above. Hand pollination encourages maximum fruit yield. New Jang Sin gourds should be grown next to an obelisk or trellis; the vertical growth supplies air circulation, reducing diseases and promoting attractive fruits. Supply deep and infrequent water, avoiding moisture on the leaves. Fertilize once in mid-season.
Harvesting New Jang Sin Gourd
Harvest when they are about 6-8 inches long and 2-3 inches in diameter. New Jang Sin gourds store for a long time as their waxy skin retains moisture well.
Use New Jang Sin Gourd as a substitute for zucchini. To retain the best flavor, do not overcook the flesh. Cut into chunks for steaming, stir-frying, soups, or braising. Stuff hollowed melons with meat and bake.
Tips From Our Gardeners
“When cooking this gourd, I recommend scraping out the seedy cavity and stuffing it with a flavorful filling such as sausage, spinach, and chopped apple.”
