How to Grow Canton White Pak Choi Cabbage

Pak choi is a member of the cabbage family, and thus utilizes the same growing practices as you would use for other types of cabbage. While it may not be considered the most widely used plant of this family, it is one of the oldest with ties beyond the development of common Chinese cabbage. Plant by sowing your seeds ¼ inch deep either 4-6 weeks before the last spring frost, or when the soil is workable. For a fall harvest, plant in July or later if your growing season allows.

Harvesting Canton White Pak Choi Cabbage

Canton White Pak Choi is known as one of the smallest types of Pak Choi available. It can be harvested at any stage, including microgreens (aka ‘chicken feathers’) at 10-15 days, baby leaves at 28 days, or at full maturity. You can also use their flowering shoots that develop in the center of the plant at premature bolting, or the flowering stage.

Harvest either individual leaves as needed by snapping or cutting the leaves near the base of the plant. To remove the whole head cut near the soil, keeping the leaves connected to the central stalk.

Culinary Tips

Canton White Pak Choi Cabbage is commonly used in many Asian dishes. It is most often used at the baby stage in fresh salads, in soups as mature heads, or dried during the winter months. These greens can be added to any dish you wish to add a touch of cabbage and mustard flavor to, cooked or fresh.
