Pre-soak your seeds for 4-8 hours at room temperature to cold water to improve germination rates. Prepare your tray with a soil medium such as coconut coir. Sow the seeds evenly across the surface. Cover lightly with a thin soil layer. This soil cover will help to knock the seed hulls away from the stem as it emerges. You don’t want to have seed hulls mixed with your microgreens as they are very hard. Stack another tray, or a weight on top until germination occurs. Uncover and expose to light after the blackout period, ensuring the greens are moist but not waterlogged. Use a fine mist when watering before and right after germination to avoid disturbing the seedlings.

Harvesting usually happens about 10-14 days after sowing once the microgreens are 2-3 inches tall and are at your desired flavor level. The exact timing can vary slightly depending on your preferences and growing conditions, so keep an eye on their development. Beet microgreens can take some time. Use a clean and sharp pair of scissors or a knife to harvest. Gently hold a small bunch of the microgreens together with one hand, and with your other hand, cut them just above the soil line or growing medium. Harvest in batches. Try not to disturb the roots or the medium, as this can introduce dirt onto your freshly harvested greens.
