6-8 Days to maturity. Eruca sativa. Arugula Microgreen Seeds. Arugula microgreens are nutrient-packed and perfect for easy greens grown indoors and year-round. Arugula has a unique and peppery flavor that can pair beautifully with a variety of dishes and cuisines. As a garnish on soup, mixed into a salad, or wrapped in a tortilla with pesto and chicken, you simply can’t go wrong! These easy-going microgreens are sure to become a staple in your home for easy greens anytime of the year. ~14,200 seeds/oz.
Prepare a level growing surface of the soil or hydroponic medium by lightly patting it down and misting it with water until it is soaked. Sprinkle the Arugula seeds densely across the surface. Make sure the seeds aren’t overlapping. An old spice shaker can be useful in distributing the seeds properly. Water them in with a mister or spray bottle. Place a tray without holes on top to create a blackout dome. Put the tray in a dark location for 1-2 days if you can’t cover them. Each day, mist the seeds to keep them wet until germination has occurred.
After they have all germinated and look plump, move your seedlings to the sun or under a grow light. Water the tray regularly but allow the soil some time to dry between waterings. The exact amount of time between waterings will be different for everyone based on the room temperature and watering amount. Generally, if growing seedlings in the sun with a shallow tray, you will have to water them much more frequently than if growing them under a grow light in a deep tray. Try to be consistent with the amount of water you add each time; this will help you know how much to water in the future. They only need an additional 5-7 days to grow once moved to the light.
Although Arugula microgreens can be grown in traditional soil or hydroponic scenarios with equal success, some gardeners say that it changes the flavor. Try both methods and see what you prefer!

The older they get, the bolder the flavor. Slice the greens off at soil level with a sharp knife, about a .25-.5 inches up. Cutting up this high can reduce the need for washing your greens (assuming they were grown in an otherwise clean environment). Washing the greens ahead of time can lessen their shelf life by half the time.
