Growing Imperial Star Artichoke in the Vegetable Garden
Start indoors 6-8 weeks before last frost. Sow 0.25 inch deep, then transplant to 24-36 inches in rows 36-60 inches. In cooler regions, provide a short vernalizing chill (cool nights) after seedlings establish to encourage first-year buds. Feed and water steadily for rapid growth.
Mulch deeply to keep soil cool and suppress weeds. Side-dress during active growth. In mild zones, perennialize with winter mulch; in colder zones, grow as an annual for summer harvests.
Harvesting of Imperial Star Artichoke
Cut buds when tight and 3-4 inches across, before bracts spread. Leave a short stem. After harvesting the central bud, side shoots continue to produce smaller, tender globes.
