New Zealand Spinach Growth Habits:

Plant New Zealand Spinach ½" below soil when it is between 60-75°. Place more seeds than you think are necessary. Final spacing should be a foot apart, but germination can be poor. Plant more seeds and thin out as they grow. Soak the seeds overnight before planting to speed germination, or start indoors a few weeks before the last frost.

Various Uses for New Zealand Spinach:

One of the easiest vegetables to cook, can be included in many different types of meals. New Zealand spinach is excellent with seafood due to its delicate flavor. Toss it in with some cooked pasta, lemon, and shrimp. Put a poached egg on top of a bowl of greens and eat with other tender vegetables. Also great braised with chicken thighs. The ideas are endless with this delicate green.

New Zealand Spinach doesn't bolt as fast as typical spinach and is perfect for hotter weather. You can have leafy greens even in warm weather in your garden. This variety is rich in vitamin C, which is essential to a healthy immune system and helps blood health with iron.
