How to Grow Jeok Gat Mustard
Sow seeds in two-week intervals starting 3 weeks before the last frost until early autumn. Provide an open space in a sunny location for growing. Keep the soil evenly moist. If the plants are allowed to dry out, their taste and attractiveness will decrease. Fertilize if the soil is infertile or if venation or paleness occurs. The flavor is best when grown briskly, so plant in fertile soil and keep watered. Thin to 10 inches apart for mature heads. May bolt as temperatures and day lengths increase. It usually takes 3-4 weeks for 5-6 leaves to grow.
Harvesting Jeok Gat Mustard
Start harvesting at 3 inches tall for baby mustard greens. Single leaves may be harvested at any stage into maturity. Cut them off individually and sparingly to allow the younger leaves to continue developing. Some wait until the plants reach maturity and then harvest the entire head like a cabbage.
Culinary Tips
Add Jeok Gat’s leaves and stems to fresh salads for a pop of color and taste. Lightly cook or pickle the leaves and stems as well. Mature leaves are excellent for pickling, stir-fries and juicing. Jeok Gat is very popular in kimchi mustard in Korea.
