Ingredients
- 1 Cup chopped garlic scapes
- 1/4 Cup pine nuts
- 1 Lemon - juice and zest
- 1/2 tsp salt
- 3/4 Cup Parmesan cheese - freshly grated
- 1 1/2 oz basil leaves
- 1/2 Cup extra-virgin olive oil
- Black Pepper

Instructions
1. Add scapes, pine nuts, lemon juice, zest, and some salt to season into a food processor. A food processor is especially necessary if your scapes have become a little on the woody size. Process, scraping down the sides part way through. Continue until the scapes and nuts have broken down (about 1 minute).
2. Add in the parmesan cheese and process until incorporated (30 seconds).
3. Add the basil and pulse until it is finely minced.
4. Transper the mixture to a medium bowl with high sides for mixing. While stirring continuously, slowly pour the olive oil into the scape mixture. Salt and pepper to taste.
Garlic scape pesto is best used within 3-4 days. Store in an airtight container.
