These last minute Thanksgiving recipes are easy to make. They are also quick kitchen sides that will leave you with extra time to spend with the family over the holiday. This recipe is quick and easy and full of flavor. Put your fresh herbs to use! Our fan favorite is traditionally fresh dill, but you could also sub in 1 tablespoon of fresh thyme for a different kind of flavor profile. Serving Size: 6 Cook time: 15 mins.
- 2 pound bag of long carrots, peeled, (sub 2lb bag of baby carrots okay)
- 2 Tablespoons of freshly chopped Dill
- Unsalted Butter or Earth Balance
You want your carrots to be peeled. Their skins can taste bitter when cooked. Half the carrots, then cut both halves into batonnet sticks. This leaves you with a thicker matchstick carrot that cooks evenly and looks nice on a plate.
To start the cooking process, add the carrots to a saute pan and add 1/4 cup of water. Sprinkle with salt and pepper. And let the carrots cook for 7 to 8 minutes. Once the water has cooked off. Add the butter and make sure each carrot gets coated evenly. Let cook in butter for 1-2 minutes, add to serving dish and then coat with chopped dill. Season with salt and pepper once more.
Garlic Green Beans:
This recipe is a healthier alternative to the usual green bean casserole, but without losing out on all the great flavor. It also leaves you with a crispy and vibrant crunch rather than the usual soft 'canned' green bean texture. Serving size: 4 Cook time: 15 mins.
- 1 pound organic green beans
- 2 cloves garlic
- 1 shallot
- chopped or slivered almonds
Heat a tablespoon of olive oil over medium-high heat in a large skillet. Add shallots and cook 1-2 minutes, then add garlic, cook for another 30 seconds. Then add the green beans, season with salt and pepper, stirring occasionally for 6-7 minutes.
Remove from heat sprinkle with salt and pepper. Then add to serving dish. Top with almonds and serve!
