It's easy to over-harvest an herb plant without realizing it, especially when a recipe calls for a big handful all at once. A few simple habits keep plants productive for months rather than struggling to recover from a single heavy cutting.
As a general guideline, avoid removing more than a third of a plant's growth at one time. Harvesting beyond that limit leaves too little leaf area for the plant to keep producing energy through photosynthesis, which slows regrowth significantly.
For most leafy herbs like basil and mint, cut just above a leaf node rather than snipping off single leaves from the top. This encourages the plant to branch at that point, producing two stems where there was one.
Rosemary, thyme, and sage grow on woody stems and respond differently than soft-stemmed herbs. Cut into the current season's green growth, not the older brown wood, which regenerates far more slowly.
Herbs generally have the strongest flavor in the morning, after dew has dried but before the heat of the day causes essential oils to dissipate. This matters most for culinary use, less so if you're simply pruning for plant shape.
With consistent, moderate harvesting rather than occasional heavy cutting, most herb plants stay productive for an entire growing season or longer.
