Non-GMO, Open-Pollinated, Heirloom Carentan Leek Seeds from True Leaf Market. Carentan leeks are an excellent addition to dishes that need an extra oniony zest. Tender white stems grow 8.5 inches long and 2 inches wide. Leaves are a medium dark green.
Leeks hail from northern Europe, where they are a cherished staple. The Carentan leek came to the United States in the 1800s and became commercially available in the 1880s.
Sow seeds indoors 8-10 weeks before the last frost date. Plant the open-pollinated, Carentan leek seeds 1/2" deep and thin to about an inch when the seedlings reach 3 inches high. After hardening off, you may transplant them 8-10" apart. To maximize the white part of the leek, mound up soil around each plant. Leeks can stay in the garden until just before the ground freezes.
Transplant the leeks 4 to a square foot.
Various Culinary Uses for Carentan Leek:
Leeks are a great addition to many dishes. Before using, however, make sure to wash them thoroughly as there may be dirt between the layers of the leek. Once clean, heirloom Carentan leeks are best cooked to release their subtle flavors and soften their fibrous texture. You can use them to make a rich, hearty potato leek soup. Or pair them with asparagus for a great vegetable quiche. You can substitute them for onions in any recipe.
