DO NOT presoak. Chia seeds naturally become gelatinous (mucilaginous) when overly wet and while this is good for making pudding or jam, it can get in the way of a successful sprout. Using a medium of choice, plant in a 10x20 tray. Mist seeds and cover to retain moisture. Keep seeds moist. Growth appears within 3-5 days.
After the cotyledons appear, move to bright light. Once the seedlings are about 0.75 inch tall, usually around day 10, they are ready for eating. Note that the longer the seedlings are allowed to develop, the more likely they are to become bitter. They are sweetest when harvested at less than an inch tall but green.
