Molokhia also goes by the names: Jute Mallow, Jew's Mallow, and Egyptian Spinach. It is best known for its slightly bitter taste and mucilaginous texture. Because this plant comes from the same family as okra it will emit a natural thickening agent when cooked. This natural property has made it popular in Middle Eastern and Asian cooking of soups and stews. Its leaves are large, dark green, and oval in shape. The plant will develop into a 4-6 foot tall bush if left to mature. We recommend not waiting until this leafy green reaches maturity though. Instead, harvest the leaves as this plant can be harvested as a cut and come again green.
