Use a clean and sharp pair of scissors or a knife to harvest. Gently hold a small bunch of the microgreens together with one hand, and with your other hand, cut them just above the soil line or growing medium. Harvest in batches. Try not to disturb the roots or the medium, as this can introduce dirt onto your freshly harvested greens.
