Hard White Wheat as a Garden Plant
Plant white wheat in a sunny spot in your garden. Plant this wheat in the fall, 6-8 weeks before frost risk, for an early summer/late spring harvest. Hard white wheat will overwinter for around 8 months before it is ready to harvest. Plan on planting at least wheat 25 seeds per square foot.

Popular Uses
Many people use these hard white wheat berries and grow them for 7-10 days into delicious, health-supporting wheatgrass. Hard white wheat can be sprouted by soaking in water for 8 hours, then transfer to a tray, sprouting sack, or jar. Hard white wheat berries should be ready to consume around day 4. Hard white wheat is the preferred wheat in bread making.
Using a high-power blender or grain miller, you can make your own fresh flour with these wheat berries. The hard white wheat berries can be used for the backbone of a warm or cold salad.

History
White wheat was originally grown in Australia, but needed to be modified so that it could grow in North America's climate. The types of white wheat that are now grown in the US were crossbred from various strains of red wheat in the late 20th century. A great deal of the original research took place at Kansas State. Some varieties of red wheat have fewer genes for their color and when these varieties are bred together the next generation will have no color.

Like other whole grains, consuming hard white wheat is a great way to achieve balanced blood sugar and reduced cholesterol levels. Hard white wheat contains a number of nutrients, like vitamins B, C, and K, folic acid, and fiber.
Some folks who experience trouble digesting conventional wheat find they can tolerate hard and soft white wheat. Organic soft white wheat grain has a very low moisture content, and stores extremely well, making it ideal as a storage grain.
