Growing Non-GMO Organic Beauregard Sweet Potatoes
Start with certified disease-free slips (not grocery-store roots). Plant slips after the last frost when soil has warmed to at least 65 F. Choose a sunny spot (6-8 hours direct sun) in loose, well-draining, sandy loam soil (pH 5.5-6.5). Space slips 12-18 inches apart in rows 3-4 feet wide. Amend with compost; avoid excessive nitrogen to encourage root over foliage.
Water consistently—keep soil moist but not waterlogged; about 1 inch per week until vines carpet the ground. Mulch to retain moisture and curb weeds. Provide heat as Beauregard thrives in 65-95 F weather. Monitor for pests and diseases (weevils, aphids, Fusarium wilt, wireworms). Practice crop rotation and use resistant slips where possible.

A staple sweet potato variety, Beauregard produces high yields of flavorful tubers with excellent storage capabilities. Ideal in raised beds, mounded rows, or large containers (20 inches wide, 15 inches deep minimum) when soil is poor or space is limited.
Harvesting Beauregard Sweet Potatoes
Harvest when vines yellow and die back, typically 100-120 days after planting. Use a fork to gently lift roots. Hhandle with care to avoid bruising. Cure tubers for 5-14 days in warm (80-85 F), humid conditions to enhance sweetness and skin toughening. Store cured tubers in a cool (55-60 F), humid environment for several months; keep out of the fridge to preserve flavor.
