August is the most important planting month of the fall season in cold-winter zones, and it goes fast. With a first frost around October 15, most cool-season crops need 6-9 weeks to produce, which means the sowing window for many of them closes by mid-August. Beets, kale, and Swiss chard go in at the beginning of the month; lettuce, spinach, turnips, pak choi, kohlrabi, arugula, and mustard follow through mid-month. The heat makes it feel premature, but the fall factor doesn't lie — the 'back fence' on timing is closer than it looks from here.

Indoors (fresh harvests):

  • Microgreens: peas, broccoli, sunflowers, arugula
  • Sprouts: alfalfa, broccoli, radish, mung
  • Herbs & greens under lights: chives, parsley, mint

Transplants to move outdoors (harden first): Broccoli, cabbage, cauliflower, kohlrabi, and kale started in July should be ready to move outside now. Harden them off carefully — transplanting brassicas during peak August heat requires a shaded transition period and consistent moisture.

Crops that can be directly sown outdoors in August: Beet, kale, Swiss chard (early August); lettuce, spinach, pak choi, kohlrabi, turnip, cilantro, dill, corn salad (mid-August); arugula, mustard (through late August). For spinach, if soil temperatures are above 75°F, pre-germinate seeds indoors in a cool spot and sow them out before the radicle fully develops.

Cover crops: buckwheat (30-day cycle — fast enough to turn under before frost), oats, field peas.

Tip: An upstate New York zone 6 can be different from a Santa Fe, New Mexico zone 6. Nothing replaces talking with experienced gardeners in your area and, of course, watching the weather closely.

Use your USDA zone as a guide. Microclimates matter — coastal/urban spots run warmer; high-elevation spots run colder.
