Growing French Corn Salad in the Vegetable Garden
French corn salad is a cool-season leafy green that thrives in early spring and fall. Direct-sow seeds as soon as the soil can be worked in spring, or in late summer for fall and winter harvests. Sow 0.25 inch deep in rows 8-12 inches apart and keep the seedbed evenly moist. Seeds germinate best in cool soil around 45-68 F; in hot weather, provide shade and extra moisture for better emergence.
Thin seedlings to 3-4 inches apart so each plant can form a compact rosette of leaves. A light layer of organic mulch helps preserve moisture and keep soil temperatures cool, especially for late-season plantings. In regions with mild winters and good snow cover, corn salad can overwinter and provide very early greens the following spring.
Harvesting of French Corn Salad
Begin harvesting when plants have formed small rosettes and leaves are a few inches long. Cut individual leaves or snip the entire rosette just above the crown. For a longer harvest window, harvest the outer leaves and let the inner leaves continue to develop.
Harvest in the cool of the morning for the sweetest, crispest leaves. Rinse gently and use fresh in salads, sandwiches, or as an attractive garnish. French corn salad can also be quickly wilted or lightly sautéed and used much like spinach in simple cooked dishes.
