Growing Licorice in the Herb Garden
Licorice seeds should be started indoors about 6-8 weeks before transplanting, since they require consistent warmth to germinate. Soak seeds in water for 24 hours, then hold them in the refrigerator in a moist paper towel in a plastic bag or container for 3-4 weeks. Seeds should be sown 0.25 inches deep in trays. Transplant outdoors once frost danger has passed, leaving 24-36 inches between plants and 36-48 inches between rows for spreading root growth. This perennial prefers full sun and loose, sandy loam soil with good drainage.
Throughout the growing process, keep the soil evenly moist but not waterlogged, as standing water can damage roots. Licorice spreads by rhizomes, so it’s wise to dedicate space or use barriers in the garden. A long-term crop, licorice requires patience before harvesting but rewards with sweet, medicinal roots. It pairs well with other perennial herbs like echinacea or comfrey in a diverse medicinal garden.

Licorice roots are typically ready to harvest after 2-3 years of growth, when plants are well-established. Harvest by digging carefully to lift the long roots and rhizomes, trimming the desired sections while allowing some to remain for regrowth.
