Growing Mexican Tarragon in the Garden
Start indoors 6-8 weeks before the last frost, sowing seeds about 0.25 inch deep and spacing seedlings 8-18 inches apart (rows 18 inches). After the danger of frost, transplant or direct sow in well-drained soil in full sun.
Maintenance is simple: thin seedlings to strong specimens, pinch back tips to encourage branching, and water regularly until established—then deep water weekly; it tolerates heat and drought. Companion planting with other border herbs and flowers works beautifully, and its bright yellow blooms attract pollinators.
Harvesting and use of Mexican Tarragon
Harvest leaves in the morning, when aromatic oils are most concentrated; regular harvesting encourages bushy growth and longer flowering. Simply pinch or snip leaves or flowers as needed for use.
About Mexican Tarragon Garden Seeds
Mexican Tarragon (also known as Mexican Mint Marigold) originates from Mexico and Central America and was used by the Aztecs, including in the chocolatl drink.
It was bred by nature for resilience in hot, drought-prone climates and offers a robust anise-tarragon flavor where French tarragon struggles.
Its golden-yellow flowers are edible, ornamental, attract butterflies and pollinators, and can be used fresh, dried, or even to make dye or incense.
Tips From Our Gardeners
"Gardeners love Mexican Tarragon for how it brightens chocolate brownies with a surprising licorice-anise kick (thanks to its Aztec roots), and share that harvesting the flowers and leaves in the morning gives you the most intense flavor punch!"
