Growing Organic Lemon Balm in the Herb Garden
Sow tiny seeds very lightly on the soil surface (no deeper than ¼ inch) and press them gently. Direct sow in spring after the last frost, or start indoors 6–8 weeks before and transplant when seedlings are 2–3 inches tall, spacing plants about 12–18 inches apart.
Lemon balm enjoys rich, well-drained soil and full sun to partial shade. Once established, water regularly but allow the soil to dry slightly between waterings. Control its spread by deadheading blooms and consider companion planting with parsley, sage, or dill to support pollinators.
Harvesting of Organic Lemon Balm
Harvest leaves once the plant is well-established—typically just a few inches tall—and continue throughout the season. For the best flavor, cut stems early in the morning, before flowering begins, and never harvest more than one-third at a time.
