Growing Organic German Chamomile in the Herb Garden
German Chamomile can grow up to 22 inches tall and 12 inches wide, and has many thin branches of finely divided green leaves. Tiny 3/4 inch white and sunshine yellow daisy-like flowers appear from early summer to fall.
Sow seeds shallowly 0.25 inches deep, either by direct sowing outdoors after frost or starting indoors 4-6 weeks before transplanting. Space plants 8-12 inches apart in rows 18 inches apart. Keep soil moist until germination.
German Chamomile prefers well-drained loam or sandy soils and full sun. It is drought-tolerant once established. Cut back lightly to encourage bushier growth and prevent legginess. It self-sows readily for the following seasons. Can be grown alongside other herbs like lavender and mint for companion benefit.
Harvesting of Organic German Chamomile
Harvest flowers when fully open, usually 60+ days after sowing. Cut flowers carefully and dry in shade or sun on screens. Flowers can be repeatedly harvested as the plant blooms multiple times through the growing season. Use dried flowers for teas, medicinal uses, or in landscaping for fragrance and pollinator attraction.
