A staple of Mediterranean and Indian cuisine (Daal), these red lentils do well in cooler temps and can be planted after the last frost of spring in soil with good drainage. A relative of peas, the lentils grow in pods, containing one or more lentils per pod. For sprouts, pre-soak for 6 to 8 hours and rinse several times daily. Sprouts are ready in 2 to 3 days.
