How to Grow Light Green Celery
Climate dependant, Chinese celery has a flexible growing season. Celery plants need a lot of moisture and thrive in the cooler temperatures of spring and fall. Provide proper coverage and established plants can last all year long. For a constant supply at home, sow seeds twice throughout the year, once in the early spring and again in the late summer. When growing for sale, sow every 4-6 weeks during the growing season. Sow seeds indoors and selectively transplant the healthiest seedlings outdoors after hardening off.
Expect slow growth in the early stages; apply nitrogen-rich fertilizer to speed up growth. Take particular care that the soil never dries out. In traditional Chinese agriculture, half-grown plants can be buried most of the way in the soil and preserved underground through the winter for an early February harvest.

Harvest leaves and young stems when the plant is at any stage, microgreens, or mature plants 10-12" tall.
Culinary Tips
Use anytime other celery varieties are used. Chinese celery is particularly delicious for stir-fries, in soups, and as a finely chopped garnish.
