Chinese Toon is also known as Xiangchun or Hsiang Chun Ya. It is a perennial hardwood tree that is also grown as a vegetable. Its leaves are very aromatic and colorful with some varieties displaying shades of green and red. These greens have an onion-like taste to them making them a great addition to your favorite stir-fry. To harvest as a vegetable, grow the seeds until young leaves and shoots develop. Cut and use your harvest immediately as they do not keep well. Like a tree you can expect Chinese Toon, a member of the Mahogany family, to reach a height of 65 feet and a width of 30 feet under ideal conditions. It spreads by both seed and sucker habit, develops small flower clusters in the spring, and grows star-shaped capsule fruit that is edible. Landscape uses include shade, specimen, and street trees.
