Growing Apache Red Sorrel Microgreen Seeds
Prepare a level growing surface of soil or hydroponic medium by lightly patting it down and misting with water until it is wet. Sprinkle the Sorrel seeds densely across the surface. Use a seed shaker or clean a re-used spice jar with holes to spread them out. Water them in with a mister or spray bottle. Place a second black tray on top of the seeds. There is no need to water them through blackout and germination.
Put the tray in a dark location for 2-4 days. After they have all germinated and look plump, lightly spritz with water. Return to the dark location or under a black tray for an additional 1-2 days. Water heavily from underneath. Move your seedlings to the sun or under a grow light. Water the tray regularly but allow the soil some time to dry between waterings. The amount of time between waterings will be different for everyone based on the room temperature and your watering habits. Avoid too much airflow. Generally, if growing your seedlings in the sun with a shallow tray, you will have to water them much more frequently than if growing them under a grow light in a deep tray. Check the bottom tray every day and refill with 1-2 cups of water when dry.
After about day 7, the crop will take a long time to grow, and it will be easy to get discouraged. Most microgreens can be harvested in 10 days, but sorrel is much better when harvested at least 3 weeks from planting.

Culinary Tips
Around 25 days after planting, the seedlings will be ready for consumption! Depending on how mature you want your seedlings, you may want to harvest them before or after that time. Slice the greens off the soil and root mass with a sharp knife about a .5 inch up. Cutting up above the soil can limit the need for washing your greens, which lessens their shelf life.
Add these delicious greens to salads, sandwiches, and much more! Eat them fresh as a snack or garnish soups with them. They pair well with a variety of sweet and savory dishes due to their more lemony flavor. Try them sprinkled on top of lemon sorbet for an interesting and nutritious twist on a traditional dessert.
