Growing Organic Orange Bell Pepper in the Vegetable Garden
Start orange bell pepper seeds indoors 8 to 10 weeks before your last expected frost date. Sow seeds 0.25 inch deep in a sterile starting mix and use a heat mat to maintain soil temperatures between 75 and 90 F — peppers are slow to germinate in cool soil. Once seedlings develop their first set of true leaves, pot them up into individual containers to encourage strong root development. Do not rush transplanting outdoors; wait until nighttime temperatures are consistently above 55 F and daytime soil temperatures have reached at least 65 F. Space transplants 18 to 24 inches apart in rows 24 to 36 inches apart in full sun.
Bell peppers thrive in fertile, well-drained soil. Work compost into the planting area before transplanting, and use black plastic mulch to warm the soil and conserve moisture. Water consistently — about 1 inch per week — keeping the soil evenly moist during fruit set, as irregular watering can cause poor fruit development. Avoid excess nitrogen, which promotes leafy growth at the expense of fruit. Side-dress with a balanced fertilizer after the first peppers begin to set. Tall or heavy-fruiting plants may benefit from light staking as the season progresses.
Harvesting Orange Bell Pepper
Peppers can be harvested at the green, immature stage once they have reached their full blocky size — typically 3 to 4 inches in both height and diameter — but the sweetest flavor comes when they are allowed to ripen fully to orange on the plant. Once the skin has fully turned a deep, even orange with no green patches remaining, use pruning shears or scissors to cut the stem just above the fruit; pulling can damage the plant. Expect around 6 to 8 peppers per plant over the season. Fully ripe orange bell peppers can be stored in the refrigerator for up to two weeks and are excellent eaten fresh, roasted, grilled, stuffed, or frozen for later use.
