How to Grow Red Capital Mustard

Prepare fertile, well-drained soil. For spring planting, it's best to wait until a bit after the last frost, if planting directly in the garden. This variety can also be planted for a fall harvest, from mid-July through early fall. Ensure the plant has full sun. This plant grows very quickly, so be ready to harvest baby greens only about three weeks after planting. Extra plantings spaced a few weeks apart will keep the harvest going for a bit longer. Water regularly, moistening the ground and not the leaves. The flavor will vary a bit depending on the outside temperature; cooler = sweeter. Fertilize as needed or use well-composted soil.

Harvesting Red Capital Mustard

Harvest Crimson Tide mustard matures quickly. You can wait until full maturity, about 45 days, but the younger leaves are more tender and sweeter. Baby greens are ready after only 20 to 25 days. At full growth, crimson tide mustard is 6-8" tall; baby greens will be 3-4" tall.

Harvest the baby greens as whole plants, cutting at ground level. The same method is best for full-sized greens as well, though the stems can be harvested one at a time; there will be regrowth.

Culinary Tips

Red capital mustard is great in salads, and it can be diced and added to many dishes. They are great as a stand-alone side with some seasonings, especially garlic and onions!
