Pepper Seeds - Hot - Giant Ristra Hybrid
Giant Ristra was selected as a 2014 AAS Vegetable Award Winner! This means this is a high quality and easy-to-grow pepper that produces consistently in a range of environments. The bushy, dark-green plants are well suited to containers.
Growing Giant Ristra Hybrid Peppers in the Vegetable Garden
Begin your pepper seeds indoors about 8-10 weeks before the last expected frost. Giant Ristra peppers require a warm starting environment; ideally, the soil temperature should be between 80-90°F for optimal germination. Plant seeds at a depth of about a quarter-inch in a sterile seed starting mix. Keeping the soil consistently moist and using a heat mat can improve germination rates significantly. Under ideal conditions, you should see sprouts within 7-14 days.
As the last frost date approaches and your seedlings have developed a few true leaves, it's time to prepare them for outdoor conditions through hardening off. This involves gradually exposing the plants to outside conditions to toughen them up. Start by placing them outside in a sheltered spot for a few hours each day, gradually increasing their exposure to sun and wind over a week. This critical step helps prevent transplant shock.
Transplant your hardened-off seedlings into the garden once all danger of frost has passed and night temperatures consistently stay above 55°F. Choose a sunny spot with well-draining soil for the best results. Enrich the planting site with compost or a balanced organic fertilizer to give your seedlings a great start. Space the plants about 18-24 inches apart, with about 2-3 feet between rows, to allow for adequate air circulation and growth.
Giant Ristra peppers require regular care to thrive once transplanted. Keep the soil evenly moist but not soggy. Drip irrigation or soaker hoses are ideal for keeping leaves dry and preventing disease. Apply a layer of organic mulch around your plants to help retain soil moisture and suppress weeds. These peppers can grow quite tall and produce heavy fruit loads. Use stakes or cages to support plants and keep fruit off the ground.
Peppers are heavy feeders, especially when producing fruit. Feed your Giant Ristra peppers every 4-6 weeks with a balanced fertilizer. Alternatively, use a slow-release fertilizer at planting and mid-season. As the plants start flowering, switching to a phosphorus-rich fertilizer can encourage more blooms and, consequently, more fruits.
Harvesting Giant Ristra Hybrid Peppers
You’ll know your Giant Ristra peppers are ready to harvest when they reach their mature length of about 6-8 inches and display a vibrant red. This usually happens around 80-90 days after transplantation. The skin should be firm and glossy. To harvest, use a sharp knife or scissors to cut the peppers from the plant, being careful not to damage the plant branches. Frequent harvesting encourages the plant to produce more fruit.

Row Spacing: |
24 to 36 inches |
Plant Height: |
18 to 24 inches |
Growth Habit: |
Upright |
Soil Preference: |
Well-draining, loose (sandy loam), slightly acidic (6.5 pH), and moisture retaining. Too much nitrogen in the soil may lead to more foliage production and less fruiting, similar to tomatoes. Peppers also need sufficient amounts of phosphorus and calcium. We recommend using a balanced fertilizer for the best results. |
Temperature Preference: |
Warmer (70-85 F). During high heat, foliar and flower development slow or pause until temperatures return to the preferred range. |
Light Preference: |
Full Sun |

Start Indoors: |
Yes Start Indoors 7-9 weeks before your last spring frost date. Harden off and transplant when seedlings are 6-8 inches tall. Bury the stem slightly deeper than the root ball. Avoid planting hot and sweet peppers right next to each other, as they can cross-pollinate, potentially affecting the flavors of your harvested peppers. |
Pepper Pollination: |
Peppers have perfect flowers (male and female parts) and will self-pollinate. However, wind and pollinator activity may increase success rates of fertilization and fruit production. |
Plant Width: |
18 to 24 inches |
Deer Resistant: |
No |
Scoville Heat Units: |
5,000 to 30,000 |
Heat Level: |

Growth Speed: |
Mid - Ready for harvest around 76 to 90 days from transplant. |
Germination Temperature: |
80-90 F |
Pests and Diseases: |
Resistant to Tobacco Mosaic Virus. Peppers are commonly susceptible to cutworms, aphids, flea beetles, bacterial spot, Phytophthora, sunscald, and blossom end rot. To avoid or reduce problems with pests and diseases, stick to a regular watering schedule (drip irrigation is preferred), plant into well-draining soils, and utilize practices such as crop rotation. When taking pest control measures, consider utilizing integrated pest management principles by using mechanical removal, biological control, and other cultural practices before turning to chemical agents. |
