Growing Gourmet Blend Beets in the Vegetable Garden
Gourmet Blend is a cool-season beet mix that performs best when sown directly in the garden. Sow seeds 0.5 inch deep and 1-2 inches apart in rows 12-18 inches apart, beginning 2-4 weeks before your last expected spring frost. For a long harvest window, make small successive sowings every 2-3 weeks until warm weather arrives, then again in late summer for fall beets.
Beet "seeds" are actually multi-germ clusters, so expect several seedlings per spot. Once tops are 2-3 inches tall, thin to 2-4 inches apart, using pulled seedlings as tender baby greens for salads. Provide consistent moisture and a loose, stone-free soil to encourage smooth, evenly shaped roots. A layer of organic mulch helps keep roots cool and soil moisture even, especially in raised beds and containers.
Harvesting of Gourmet Blend Beets
Begin harvesting baby beets when roots reach about 1-1.5 inches across, usually around 30-40 days, for the most delicate texture and flavor. For full-sized roots, allow beets to size up to 2-3 inches in diameter and pull as needed, loosening the soil first to avoid bruising.
The colorful mix shines in the kitchen: deep red roots for classic borscht and roasting, golden roots that don't bleed, candy-striped Chioggia slices for eye-catching salads, and mild white beets for gentle sweetness. Don't forget the greens—trim leaves with short stems and sauté, steam, or braise them like Swiss chard or spinach.
About Beet Seeds - Gourmet Blend
Gourmet Blend combines five heirloom-style varieties—Bull's Blood, Detroit Dark Red, Golden Detroit, Chioggia, and White Albino—into a single, easy-to-grow mix. The result is a rainbow harvest of red, gold, striped, and white roots, along with richly colored tops that are as ornamental as they are delicious.
This blend is ideal for gardeners who love flavor, color, and versatility. Harvest thinnings and baby beets for tender, restaurant-style dishes, then let a few plants mature for winter storage or hearty roasted roots. Beets are naturally rich in fiber, potassium, folic acid, and vitamin C, making Gourmet Blend a nutritious staple for cool-weather beds and container gardens.
Tips From Our Gardeners
"Sow Gourmet Blend thickly, then thin in stages—first for baby greens, then for baby roots, and finally for full-sized beets. Aim for roots 2-3 inches across for the best balance of sweetness, color, and texture, and roast different colors together for a stunning side dish."
