Hollow Crown Parsnip Growth Habits:

For the straightest roots, use deep, sandy loams and peat soil. Direct seed heirloom Hollow Crown Parsnip seeds 1/2" deep, spaced about 1" apart. Later, thin to 2-3". Parsnips take about 3 weeks to germinate, and require moist soil prior to germination. In the fall, when the parsnips are mature, they can be left in the ground and harvested when needed. The longer they stay in the ground, and especially after a light frost, the sweeter their taste.

Various Uses for Hollow Crown Parsnip:

Parsnips grown from heirloom Hollow Crown seeds are usually cooked before eating. They can be roasted, sauteed, mashed or pureed. They can be used in stocks, and in particular, make a great root vegetable in stews or pot roasts. Parsnips can be preserved by storing in a root cellar, canning, or freezing.

Parsnips grown from non-GMO Hollow Crown seeds, like all varieties, are rich in vitamins A and C. These act as antioxidants, which help decrease damage to cells. They also are thought to prevent chronic conditions like cancer, heart disease and diabetes. Potassium is present as well in the root vegetable. This mineral reduces the risk of kidney stones and also helps with heart function. Parsnips are also high in fiber, which can help treat diverticulitis, intestinal ulcers and hemorrhoids. In addition, fiber is thought to assist in the regulation of blood sugar and reduce cholesterol.

Prior to the widespread importation of sugar, the Europeans used parsnips as a sweetener in jams and desserts.
