Growing Organic Lavender in the Herb Garden
Lavender seeds experience a significant increase in germination if sown outdoors in the fall to lie dormant through winter, or stored in a freezer for about 3-4 weeks prior to spring sowing. After cold treatment, you can start seeds indoors 6-8 weeks before the last frost. Sow seeds 0.25 inches deep, and lightly press into the soil, keeping the germination temperature between 65-75°F. Once seedlings are ready to be transplanted, place them 12-18 inches apart.
Lavender grows best in full sun and well-draining soil. Avoid excess watering, and prune lightly after flowering to keep plants tidy and long-lived. Pair with other Mediterranean herbs like sage, thyme, or rosemary for a fragrant and pollinator-friendly garden.
Harvesting of Organic Lavender
Harvest flower spikes when about half of the blooms on a stem have opened. Cut the stems just above the leafy portion using sharp shears, and hang them in small bunches to dry in a well-ventilated space.
