Outdoors (veg & herbs): spinach, arugula, lettuce mixes, mâche (corn salad), kale, collards, mustard, bok choy, tatsoi, cilantro, dill, parsley, bunching onions, radish.
Cover crops: winter rye, crimson clover, hairy vetch, Austrian winter peas. Rye + vetch is a reliable mix.
Flowers:sweet peas, calendula, poppy (California poppy), bachelor’s button—best with a low tunnel in colder pockets.
Indoors: microgreens and sprouts; start hardy herbs and greens for plug-sized transplants to set out during mild spells.
Starts to begin now (under lights): bulbing onions (short/intermediate-day), leeks, perennial herbs (thyme, oregano).
